Jalantro Chicken Tacos

Ingredients:
1/2 cup chicken stock
Salt/pepper to taste
2.5 lbs boneless, skinless chicken thighs
½ cup Jalantro
Instructions:
Pour 1/2 cup chicken broth into the bottom of your Instant Pot.
Lay 2.5 lbs of boneless skinless chicken thighs on top of the broth- do not mix.
Season liberally with salt and pepper.
Pour one jar of Jalantro over the chicken – do not mix.
Seal and cook over high pressure for 12 minutes, followed by 12 minutes of natural release.
Remove instant pot lid, shred chicken with hand mixer set to low or with two forks.
Adjust the seasonings to your taste then layer into the tortillas and garnish with thetoppings of your choice.
