Jalantro Chicken Enchiladas

Ingredients:

  • 1 whole roasted chicken

  • 1 jar Jalantro heat level of your choice

  • 1 16 oz. bag shredded cheese

Instructions:

  1. Preheat oven to 350 degrees.

  2. Shred chicken meat and discard bones and skin. 

  3. Take a 9 x 13 in baking dish, spray first with cooking spray then spread a thin layer of Jalantro along the bottom.

  4. Take corn tortillas that have been softened in oil either in a pan over heat or in the oven and fill one by one with chicken, a drizzle of Jalantro and a sprinkle of cheese. Arrange seam side down in dish.

  5. Once all enchiladas have been assembled, top with more Jalantro and cheese.

  6. Bake in the oven until melted and warmed throughout.
